Sweet Potato Tacos for the win! Flavorful, filling and easy to make, what more can one ask for? I will say though I totally forgot to add the feta cheese, not sure how that happened but I realized it the following day as I was fridge surfing. So if you are looking for an easy meal to make that is more on the healthier side, go out and purchase your copy of Guerrilla Tacos by Wesley Avila and give them a try. I am going to give these tacos an 8.5 out of 10, thats right they are damn good.
